RECIPE: Golden, Fluffy Pancakes with Orange Sauce

So simple to whip-up, these delightfully golden and gloriously fluffy pancakes are sent from heaven, especially when coupled with this flavourful orange sauce.

After all, what could be more thrilling than a bite of a fluffy, melt-in-your-mouth pancake?
The trick to achieving that fluffy consistency is with your batter – as long as it's thick and slowly runs off your spoon, you're on your way to stardom.
Also, why rush the cooking? It's just part of the fun that pancakes bring.
Have your coffee or freshly squeezed orange juice nearby while you ensure every pancake is cooked on low-medium heat and not flipped too soon (just wait for the bubbles to appear). This is how you'll achieve that incredible golden colour.
Top your pancakes with anything you like, but give this orange sauce a whirl for something extra-special.
Golden, Fluffy Pancakes with Orange Sauce | Makes 12
Ingredients | Pancakes
- 2 cups plain flour
- ¼ cup sugar
- 4 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- 1½ cups milk
- 1 free-range egg
- 2 teaspoons vanilla extract
- Rind from half a lemon
- ¼ cup butter, melted

- 125ml freshly squeezed orange juice
- 75g sugar
- 2 tablespoons orange liqueur
- 65g unsalted butter, cubed
- Pinch of sea salt flakes
Method | Orange Sauce
In a medium saucepan, bring juice, sugar and liqueur to a simmer and stir until sugar dissolves.
Using a whisk, add cubed butter, one at a time, then stir your sea salt flakes in.
Simmer for 5 minutes, until it develops into a thick, marvellous syrup.
Method | Pancakes
Add flour, sugar, baking powder, baking soda and salt to a large bowl and combine well.
In another bowl, whisk together milk, egg, vanilla extract, lemon rind and melted butter.
Slowly, fold whisked ingredients into the dry ingredients and mix to create a smooth batter that's creamy and thick. If your batter's too thick, just add a little more milk until you get it right.
Pour into an easy-pour jug and set aside to rest for two minutes.
Meanwhile, heat a small amount of butter in a non-stick pan over low-medium heat and start cooking. Remember to flip your pancakes as bubbles appear to get that golden hue.
To serve, stack your pancakes on your favourite plate or platter, top with your favourite fruits, a dusting of icing sugar, and of course, a drizzle of orange sauce.
